On 22/12/2023 we did our very first Gin run on the new Still. It turned out fantastic, the flavour is awesome and the feedback has been very positive. We did run into one small problem with the first batch, it is starting to louche (the Gin starts to go cloudy when diluted because the oils come out of suspension) when we diluted it to 42%. The reason that we chose 42% is because we use a lot of botanicals to produce our Gin, it does have a tendancy to louche. We have a solution for the problem though. We are going to make our Aviatrix Rose Gin and Bluebelle Gin out of the first batch. As both of these Gins have colour to them, that will solve the problem. Going forward we will tweak the recipe slightly to fix the problem.
